Pasteurisation of Juices Containing Pulp and Fibre
The Challenge
Process juices of all kinds, with and without pulp and fibre require a long
shelf life and therefore a suitable process treatment. The aim is to
guarantee a stable product by means of economic processing.
The Solution
Thermal treatment with pasteurising plants (short time heating plant
"STHT") in which the product is heated for a short time only, thus protecting
it from long term deterioration without having an adverse effect on the
quality in terms of taste, colour, etc. The types of products to be
heated, the way of filling and the degree of automation have an influence on
the design of such plants.
Brief Description of STHT Plants
The balance tank of these plants may be designed as an open or closed tank.
The product heater of the plants is equipped with a secondary hot water circuit
having the minimum ΔT between hot water and product. The heat treatment system
to be used first of all depends on the properties of the product to be
treated. These properties are also deciding factors as to whether the
product needs to be deaerated
